Brisa Deneumostier ( 1979 Peru)
|
Brisa Deneumostier graduated as a chef from the Culinary Institute of America, New York in 2002. Her culinary expertise has taken her around the world (North & South America, Europe, South East Asia, the Middle East, North Africa and Japan) where she has enjoyed cooking and exploring the culture and cuisine of the places she has visited. Brisa has worked and trained at some of the world’s finest restaurants including: Noma-Denmark (#1 in the world), Oud Sluis-Netherlands (#19 in the world), Tabla-NY, Nobu-NY, Astrid & Gaston, Peru, Baan Rim Paa-Thailand.
Brisa's interest in nature, responsibility with the environment, healthy eating and activities focused on well-being were first introduced to her at home. She grew up in such an environment created by her parents and, as a result, over the years her cooking style has evolved into a healthy, tasty style. Since she started cooking, Brisa knew she wanted not only to feed the human pleasure of eating but also to nurture the human body with quality, taste and healthy food. Brisa's interest in healthy, mindful-eating along with her yoga and meditation practice since her teenage years has lead her to find, through the act of cooking and eating, a way of connecting with our environment and the innate wisdom of how to nurture our bodies. Brisa has continued self-learning through research on the benefits of food and food as our primary medicine. She has experimented with a Peruvian-Chinese doctor in Lima, Peru and has taken a course in Ayurveda (food as our primary medicine).
Brisa Deneumostier continuously strives to acquire new and exciting ‘cutting edge’ culinary skills. It is with great enthusiasm and drive that she shares her vast knowledge about nutritious, mindful cooking and eating through the “Mindfulness” practice in collaboration with her partner: Manuel Kölker

Manuel Kolker (1971 Germany) |
Manuel Kolker is an ordained Zen practitioner of the White Plum lineage, teacher of the MBSR- Mindfulness-based Stress Reduction (program created in 1979 by Jon Kabat-Zinn, PhD, University of Massachusetts) and teacher of Mind-Body Stress Therapy (MBST). After finishing his career as a medical nurse in various institutions, Manuel graduated from the first German MBSR teachers education class in 2003, followed by an intensified Zen Buddhist training as a monastic in the Zen River Temple, Netherlands, for seven years.

Over 50 million dollars is spent each year in the US by people who are trying to lose weight.
Recently in the United States and abroad, tools from the “Mindfulness” practice have been applied to people who want to lose weight or live a more harmonious, “wellness” life.
During “Wellness Week” at Edde Sands we will awaken our true intuitions and learn to nourish the body, mind, heart and spirit. We will give you a boost while sharing helpful tips & advice on intuitive, healthy eating habits and show you that there is a way instead of the usual cycles of restrictive eating & over-eating.
Mindfulness simply means “moment-by-moment awareness of life.” Mindfulness is a return to paying attention to life. When we pay attention to our food we begin to notice all sorts of wonderful aspects of the food and we become aware of what and how much we’re putting into our bodies.
Through Mindful-Wellness Cooking and Eating we will learn how to make healthier choices, thus creating a friendlier relationship with food.

To discover “why do I eat?” Often we replace our emotional or psychological “hunger” for the physical one. We then fall into over-eating” or restrictive eating instead of “instinctively eating.”

To learn how to deal with external factors that trigger our not-so-healthy habits through “Mindfulness” techniques .

When you learn to manage your eating by listening to your instincts, you’ll begin to trust in your ability to take charge of other areas of your life as well. You will then be in charge and not in control. You will feel more motivated to make healthy eating and activity choices, not because you have to, but because you want to.
